Experts at Bourbon Barrel-Aged beers, Goose Island recently experimented with wine barrel aging, and the results were nothing short of remarkable. Following the success of Sofie, a superbly crisp Saison aged in Chardonnay barrels, the Michigan brewery began a succession of elegant barrel-aged brews, including Gillian, a strawberry and white pepper-infused Sour Ale.
Brewed with Champagne yeast, Gillian breathes seductive berry scents, the sour fruit character offset by a lively a brett yeast bouquet and silky wine like quality.
On the palate, you’re greeted by more sharp brettanomyces tones, followed by a burst of ripe berry fruitiness and hints of citrus that evoke sourdough bread and spicy strawberry jam. Soft and understated, the ensemble is truly a taste experience.
