This animated Wild Ale has a dry wild yeast flavour offset by lively fruity hops and enough barnyardy wildness to satisfy fans of lactic fermentation. To achieve this sublime Wild fermentation, the brewers used Crooked Staves secret ingredient - CMY yeast - a triple-header of 3 Brettanomyces strains know only to Crooked Stave founder Chad Michael Yacobson - CMY, get it?
Chad, King of the Wild Yeasts – your Majesty! – is a light Sour Ale with overripe fruit scents and a tangy nose that evokes fermented grass down on the farm.
On the tongue, the tickly carbonation is firm yet gentle, bringing out the citrusy, zesty hops flavours mixed with lively lactic yeast. Further back on the tongue, Chad gets expressive, full of dry, funky, barnyardy wild brett yeast, to give a perfectly pucker-inducing sharpness and a long, dry dusty cellar finish.
Hazy gold, white head, strong carbonation
